Balsamic Chicken Pasta Salad

This bright pasta salad is sure to please you and your guests, with fresh herbs, colorful vegetables, and the perfect Skinnygirl™ Balsamic Vinaigrette Salad Dressing.

  • 2 boneless, skinless chicken breast
  • 1 Tbsp. fresh basil leaves (chopped)
  • 1 Tbsp. fresh parsley (chopped)
  • 8 oz. small shell pasta (or pasta of your choice)
  • 1/4 cup red pepper (diced)
  • 1/4 cup red onion (diced)
  • 1/2 cup frozen vegetable (any variety)
  • 1 1/2 cups Skinnygirlâ„¢ Balsamic Vinaigrette Salad Dressing


Marinate chicken breasts in Skinnygirlâ„¢ Balsamic Vinaigrette Salad Dressing for at least 1 hour. Once marinated, grill or broil the chicken. When finished, cut the chicken into bite sized pieces. Cook pasta according to package directions. Drain and rinse with cold water. In a large bowl, combine all ingredients except cheese. Chill for at least 1-2 hours. Before serving, stir salad and top with grated cheese. Garnish with fresh basil, if desired.
