Roasted Vegetables

Skinnygirl’s Roasted Vegetables are easy-to-make, vibrantly colorful, and absolutely delicious, making great flavor and healthy living virtually effortless.

  • 1 bunch fresh asparagus (trimmed and cut into 2)
  • 1 red onion (sliced)
  • 2 small yellow squash or zucchini (halved lengthwise and sliced)
  • 2 Tbsp. olive oil
  • 1 cup Skinnygirl™ Balsamic Vinaigrette Salad Dressing


Preheat your oven to 425. Spray a baking sheet with a nonstick spray. Place all of the vegetables onto the baking sheet. Add 4 tablespoons of Skinnygirl™ Balsamic Vinaigrette Salad Dressing, and toss to thoroughly coat the vegetables. Bake for about 15 minutes, checking often after 10 minutes.
