Sweet & Savory Pork Quesadillas
These sweet and savory pork quesadillas are a new take on traditional quesadillas, with an extra special twist.
pork cutlets (boneless)
Skinnygirl™ Raspberry Vinaigrette Salad Dressing
8 10 inch
Monterey Jack cheese (shredded)
carrots (grated in long shreds)
Place cutlets in a medium sized casserole dish, cover with dressing. Cover and bake at 350°F to internal temperature of 160°F. Remove from heat and shred. Place tortilla in frying pan coated with a nonstick spray, spread with 2 oz. shredded cheese and top with second tortilla. Grill until lightly browned and cheese begins to melt. Turn and brown on other side. Remove from heat and open halves. Insert shredded pork and carrots. Close and cut into wedges to serve.
